How Chicken Salad Was First Created in Rhode Island

Mind blown, right? Chicken salad is said to have been created at a deli in Wakefield, RI back in 1863 using chicken, mayonnaise, tarragon and grapes.

Over the years, many versions have been created. Some vary the amount of mayo, others incorporate ingredients such as celery. Nevertheless, it's got staying power and everyone has their favorite way to prepare it.

Stop & Shop Celebrates Rhode Island's Culinary History

To celebrate, Stop & Shop announced the first-ever National Chicken Salad Day on June 3.

"We’re excited to add something fun to recognize the state’s unique culinary history, and to establish an official day that recognizes its role as the birthplace of modern chicken salad," Stop & Shop District Director Vinod Israni said.

"It’s also a chance to thank our local suppliers, first responders, and the infrastructure crews who keep Rhode Island running," Israni added.

Stop & Shop sent a truck to deliver chicken salad sandwiches to workers across the state, including those working on the Washington Bridge, South Kingstown Town Hall employees, first responders and more.
