Once again, my neighbor has blown my mind.

The perks of living next door to a chef are that I get to sample and test out her latest and greatest creations. What starts with a text to notify me that there are goodies in the backyard double-sided mailbox always ends with a happy tummy.

I was told that she was going to make deviled eggs (one of my favorite hors d'oeuvres) but ended up with something much better thanks to a happy little accident.

Thus, the dawn of loaded potato deviled eggs.

"Yesterday I was making a traditional batch of deviled eggs and as I was making the filling, the bowl chipped and I had to throw away all the filling," Leah Robichaud said. "I was stuck with two-dozen egg-white shells with no fillings, so I googled some alternative fillings."

Luckily for Robichaud, she just so happened to have all the ingredients on hand to make the loaded potato filling.

"The filling was mashed potato (I had a package of instant mash floating around, so I used that), chopped bacon, scallions, sour cream, and cheddar cheese," Robichaud said.

She boiled the eggs, prepped the filling and created a masterpiece that was meant for curious tastebuds. Trust me when I say that if you're looking to switch up the appetizer game at your next soirée, bring a plate of these bad boys and you'll be as popular as the person who created chicken wings.
