Ever had a Portuguese rice waffle before? Please don't knock it before you try it.

I stumbled upon a recipe on Instagram involving leftover rice and a waffle maker and was instantly enticed. First of all, when it comes to breakfast, I'm a sucker for waffles. And if we're talking sides at a Portuguese restaurant, one of them has to be rice.

What happens when you combine two of these delicious foods? You get a mouth full of magic, my friends, and I'm here to dish out the recipe. That is, of course, if you have a waffle maker/iron.

Every year, my good friend and coworker Pam Arruda brings in her famous homemade Portuguese rice. It's packed full of veggies and chourico and satisfies an appetite like nothing else. I always bring home a to-go container so I can indulge at dinner. This time, I also brought it home to try out this new waffle recipe I've been sitting on.

Let me tell you, it did not disappoint and only took three easy steps.

1.) Mix Your Rice Batter:

I filled a bowl with rice and cracked an egg over it with a dash of cracked pepper for seasoning. Stir until you have a nice thick batter.

2.) Spread Your Batter On The Waffe Maker/Iron Evenly:

Using a spoon, fill the waffle maker with about a half-cup and make sure every nook and cranny is filled with the "rice batter" to get a well-rounded waffle once it's cooked.

3.) Press The Waffle Maker and Rotate:

Once the waffle maker/iron is closed and locked into position, let the soon-to-be waffle cook for two-and-a-half minutes or until it's golden brown or crisp to your liking. Let it cool on a cooling rack once complete to allow the waffle to solidify.

The only thing left is to sprinkle a little sharp-cheddar cheese on top and your choice of hot sauce or ketchup (or both, which is my preference) and enjoy.
