Another great recipe from the gals at Boutique Fitness. Angela, owner and personal trainer at Boutique Fitness is like me, always searching for new ways to prepare deliciously healthy meals.

Here is a recipe Angela found and shared from Rachel Ray's magazine with some of Angela's suggestions~

ingredients: 

  • 3 oil-packed anchovies, minced
  • 1 clove garlic, minced
  • 2 tablespoons EVOO
  • 1 1/2pounds carrots, sliced
  • Salt
  • 1/4cup chopped parsley

directions:

  1. Combine anchovies, garlic and 1 tbsp. EVOO. Toss carrots with 1 tbsp. EVOO and pinch salt. Roast at 425 degrees for 20 to 25 minutes. Toss with anchovy sauce and parsley.
  2. This recipe will work will with whatever veggies you have on hand.  The dressing would pair perfectly with any combination of roasted summer squash, bell pepper, zucchini and eggplant.  Simply cut the veggies into slices, toss with olive oil and roast in a 425 degree oven for 20 minutes.

Angela's message:

If you get squeamish over the prospect of anchovies, I beg you to set your reservations aside and give this recipe a go.  The anchovies will not taste fishy.  In fact, no one (except the cook) will even know they are there.  The anchovies provide the deep savory  umami taste to the dish that balances so well with the fresh parsley and sweet roasted veggies.  In addition, these little guys provide a powerful does of good nutrition.  Anchovies are a fantastic source of healthy fats.  They actually increase the potency of the veggies’ antioxidants.  What a perfect pair!
