I did something last summer which I regretted. Somehow I made it through the entire summer without indulging in a lobster roll. When you live in the No. 1 fishing port in all of America, that is an inexcusable offense. When the lobster meat is cold the texture is even better to me. I don't want the sandwiched slathered in mayo, but I want just enough to hold the sandwich together.
