It's the summer, and most of us are out enjoying the (mostly) good weather. So does that mean sacrificing our healthy options for greasy fast food and takeout? No, and the folks at Boutique Fitness have you covered. 

They have some very healthy suggestions on their website called No Cook Meals. These are very easy to prepare, and very healthy. The first recipe we are going to look at is a delicious Bean & Salmon Salad with Anchovy- Arugala Dressing.

What you need:

1 1/2 cups baby arugula

1/3 cup fresh parsley leaves

1/4 cup lemon juice

3 cloves garlic, minced

2 oil-packed anchovy fillets, finely chopped

1 tablespoon chopped shallot

Pinch of salt, plus 1/4 teaspoon, divided

1/4 cup extra-virgin olive oil

4 cups cooked cannellini beans, well drained, at room temperature or warm/ or 2- 15 ounce cans drained and well rinsed

1 7-ounce can wild salmon, any bones and skin removed, flaked

3/4 cup thinly sliced radishes

1 stalk celery, sliced diagonally 1/4 inch thick

Freshly ground pepper to taste

4 large leaves butter or Boston lettuce

1 avocado, sliced, for garnish
