A beloved Carver ice cream shop that has been in business for over 50 years is getting a new look prior to the 2023 season.

Erickson’s Ice Cream on Route 58 has begun construction on a new building to continue serving up scoops of deliciousness and start the next chapter in its storied history.

Which is good news for us, since it’s one of our favorite places to grab a dish or a cone of ginger ice cream.

Erickson’s has been in business since 1969, and dishes out Richardson’s brand homemade, hard-serve ice cream. The popular spot gets rave reviews on social media, and while it is pretty much the only ice cream game in town, it’s certainly stood the test of time.

Well, that is until a few weeks ago, when Erickson’s longtime building was torn down to make way for a new, modernized ice cream shop.

According to the permit application, the total plan was to raze the existing shop and build a new one – but there are some other interesting details in the permit application.

The plan also includes razing an existing shed and garage in order to “construct a new three-bay commercial building.”

“The first bay is proposed as a retail shop and the remaining two bays are for tradesmen,” the permit application states.

We reached out to Erickson’s to find out what they may have planned for the new spaces, and if they have an expected completion date. So far, they’re keeping things close and are not yet giving us the *ahem* scoop.
