
New Bedford’s Bomb Dog NB Is Ready to Explode With Flavor
Downtown New Bedford is about to explode with late-night flavor.
Tucked into 79 North Water Street, Bomb Dog NB is officially on the verge of opening, and if the recent soft launch is any sign, SouthCoast late-night eats may never be the same.
The brainchild of Adam Katz – the same culinary mind behind PLAY Arcade – Bomb Dog NB is serving up hot dogs like you’ve never seen before. From bun to wiener to toppings, every layer is crafted for maximum flavor without the mess or sticky fingers.

A Soft Launch With Big Flavors
Earlier this week, Katz and his team hosted a private friends-and-family tasting to put their menu to the test. The lineup features everything from classics with ketchup and mustard to signature creations that push the boundaries of what a hot dog can be.
I went in ready to play it safe but walked out converted. My trio of choice:
- The Seattle: cream cheese, caramelized onions, mustard and jalapeños
- The Spicey Bacon: crispy bacon, nacho cheese, and a house-made maple hot sauce
- The Big Dill: dill pickles, banana peppers, crispy onions and ranch
My wife dove into the Taco Dog (cheese, pico de gallo and Baja sauce) alongside the Spicey Bacon.
Every dog impressed, but the surprise winner for me was the "Seattle."
At first glance, mustard and cream cheese looked like a culinary crime scene. Then I took a bite, and suddenly it made perfect sense. The cream cheese mellowed the tang of the mustard, the onions added sweetness, and the jalapeños sealed the deal.
If the made-in-house maple hot sauce of the "Spicey Bacon" doesn’t become a bottled product soon, that would be a crime.
Drinks, Treats and a Local Twist
To wash it all down, I paired my hot dogs with a local specialty: The Nor’Eastah coffee milk, brewed right here on the SouthCoast. My wife kept it classic with a crisp ginger ale. For dessert, Bomb Dog NB also teases ice cream treats that fit perfectly with the casual, late-night vibe.

Between the unique menu, the attentive staff and the playful atmosphere, the soft launch felt like a home run.
The Official Rollout
Bomb Dog NB is set to officially open its doors to the public on Monday, September 15. Hours of operation and specials are expected to be announced soon, but one thing’s for sure: New Bedford just got its newest go-to spot for anyone craving a creative twist on America’s most underrated handheld.
Congrats to Adam Katz and the Bomb Dog NB team, because these dogs are ready to bark.
