Ever since I acquired a grill, I've been throwing everything and anything edible onto the flames.

There's just something about grilling that makes me feel empowered and engaged in the culinary arts. It brings out the "man" in me and when that spatula is in my hand, I have the confidence of a thousand gods.

Ok, perhaps that's a little exaggerated, but I do feel good when I know that dinner is being flame-broiled.

From vegetables to burgers, kielbasas to chicken breast and steaks, I've tackled it all. However, if there's one food item on the menu that I claim proudly as my specialty to cook on the grill, it's homemade cauliflower-crusted pizza, and I'm here today to teach you my ways.

To start, here's what you'll need:

  • Cauliflower crusts (frozen)
  • Alfredo sauce
  • Rotisserie chicken (one whole chicken)
  • Mexican-blend cheese (one bag)
  • Toppings:
    • Pepperoni
    • Banana peppers
    • Jalapenos
    • Your choice of extra toppings
  • Pam cooking oil spray
  • Grill
  • Grill brush

Now that you have your ingredients, feel free to add the toppings of your choice to your pizza. For vegetarian style, leave the chicken and pepperoni off and add veggies of your choice. There will be no difference in cooking time, but the pizza may become a little softer rather than crisp due to the water in vegetables such as green peppers and tomatoes.

Total prep time = 12-15 min.

Total cooking time = 10-12 min.

Total time overall = 25 min. (on average)
