
Fall River Mom Launches Luxury Mini Pancake Cart
There’s a new sweet sensation flipping its way onto the SouthCoast scene, and it’s coming straight out of Fall River.
Meet The Flippin’ Pancake, a luxury mobile mini pancake cart created by local entrepreneur Michele Antunes. While pancakes are nothing new, Antunes is taking things to the next level with a fully customizable, made-to-order experience that’s as fun to watch as it is to eat.
The best part: everything is made fresh, right in front of you.
Unlike your typical grab-and-go breakfast, The Flippin’ Pancake brings the action to the party. Guests can watch their mini pancakes being cooked live on the griddle, then topped with everything from fresh fruit and drizzles to over-the-top specialty creations.

Antunes said there’s no strict menu. Instead, she offers a mix of signature pancakes, premium options, and a “create your own” experience depending on the event.
A Business Built on Passion and Purpose
For Antunes, this business is about more than just pancakes. After nine years as a barber, she had to scale back her hours following her son’s diagnosis of TSC (Tuberous sclerosis complex) and autism, all while pursuing a degree to become an occupational therapy assistant.
“I needed something that could help me financially and be something that I like to do, as well as something I can apply my creativity towards,” she said.
Inspired by similar concepts in the South and on the West Coast, she saw an opportunity to bring something unique to the SouthCoast.

More Than Just Pancakes
The Flippin’ Pancake caters to everything from birthdays and weddings to corporate and school events. Antunes can even customize toppings and have the entire cart match the party’s theme.
Fan-favorite flavors include Oreo Nutella, cinnamon roll, Biscoff, churro, and a classic strawberry banana with Nutella, while premium options like Ferrero Rocher and Dubai chocolate take things up a notch.
Antunes will also offer pop-up events and “celebration boxes” for those looking to enjoy the treats outside of private bookings.
A Sweet Debut That Gives Back
The Flippin’ Pancake officially launches its debut on April 11 at the Elks Club in Fall River during an autism awareness fundraiser benefiting Mae's Playground.

Antunes, who has a personal connection to the cause, said she’ll be donating 50 percent of her proceeds from the event.
