It's National Bacon Lover's Day and I can assure you I'm the biggest bacon lover around.

Bacon and I have been together for a VERY long time. As far back as I can remember, I've loved bacon with all my heart and all my soul. Today is basically Valentine's Day for bacon and I, so allow me to pen this open letter to the love of my life:

Dearest Bacon,

It's hard for me to remember a time in my life without you. We've had our ups and downs. We've grown. We've changed. The one thing that has remained for me is that fire in my belly and that love in my heart for you and all that you are. 

I remember when we first met, you were nothing but just regular pork bacon. You were just you. Nothing more. I was instantly infatuated. Even in the beginning you were never shy, always sizzling loud for all to hear! 

Over the years you've reinvented yourself and it's been an honor to discover new aspects of your delightfully delicious self. I remember when we went through the seasoned stage. You were bringing so much flavor into your personality and into my life. I'll never forget those days. Especially the Cajun. That Cajun was something else.

As we've progressed and aged, we've learned that our health needs to become a priority, and together we've worked out a way to still enjoy each other the way we always have and remain just as healthy. You took on new roles just to keep me honest. Turkey bacon is one example. I wasn't sure how the turkey bacon phase would go, but here we are standing tall through it all. 

Bacon, you're my one and only. My rock. My breakfast. My lunch. My dinner. No matter when, no matter where, I'll always be there for you. When I smell your intoxicating aroma I will always come running. I'll always be happy to bring you with me to whatever it is I'm doing or eating. 

Bacon. I love you. Always & Forever.
