
How One Dartmouth Restaurant Reinvents the Cheese Roll
Many restaurants on the SouthCoast offer cheese rolls on their menus, those delicious grilled globes of bread with melted cheese baked into the dough. Some spots offer versions that feature linguica, bacon or sausage inside in addition to the cheese.
Just Another Phoenix in Dartmouth, however, lets you stuff the whole darn menu into your cheese roll.
Endless Options: Pick Your Favorite Fillings
OK, that may be a bit of an exaggeration, but any item on Just Another Phoenix’s omelet menu can be put into your stuffed cheese roll. Ham, bacon, sausage, hash, linguica, chourico, onions, peppers, tomatoes, broccoli – the combinations are endless.
Basically, it’s like getting an omelet in bread form, perfect for those who are allergic to eggs, or those who just don’t like them.

During our recent broadcast from Just Another Phoenix, I got to shake the rust off my spatula and step back behind a breakfast grill for the first time in nearly 10 years. I am sure I cooked thousands of omelets during my 22-year stint as a breakfast cook, but I never stuffed a cheese roll like this.
Step-by-Step: How the Cheese Roll Is Made
Chef Matt showed us how it is done. First, they throw whatever ingredients you’d like in your cheese roll onto the grill. We chose the ingredients for the Azorean Omelet, from Just Another Phoenix’s soon-to-debut new menu.
Matt began to sauté the linguica, onions and peppers, and then took a fresh-baked cheese roll that has a hollowed-out center and started grilling it up in some butter.
He then flipped the cheese roll over and filled the hole with the linguica, onions and peppers before flipping it back to have everything melt together.
Just a few moments later, grilled perfection! It was big enough for two people to share, and was definitely filling.
