Like most people right now, I am getting ready for Thanksgiving. I'm hosting at my house again this year, but for more people than I've ever hosted before.

So I'm trying to get a head start on things. I started out by making some cornbread. I've never made it before, so I was crossing my fingers that it would actually come out decent. I found a recipe on Pinterest that I thought sounded really good and easy enough, so I went with it.

It was quick to prepare and took exactly 30 mins. to bake. Here's the recipe if you'd like to try it!

1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt

  1. Preheat oven to 375 degrees.
  2. Grease an 8 inch square pan.
  3. Melt butter in large pan. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
  4. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
